Mom’s Blueberry Pie

Ingredients listed below.
Directions:
Mix sugar, salt, ½ cup blueberries, diluted cornstarch and ¾ cup hot water. Cook 10 minutes over low flame, crushing berries as it cooks. Add 1 Tbsp. Lemon juice. Mix well. Pour over rest of berries and let stand until cold. Make 2 piecrusts or use ready-made pie crust (Pillsbury brand is delicious!). Sprinkle bottom crust with breadcrumbs, pour in berry mixture. Dot berries with 1 Tbsp. Butter. Cover with top crust. Brush top with milk. Sprinkle with a little sugar. Bake at 400 degrees for 45 minutes.
Hint: Make several pies at once and freeze unbaked pie in a freezer bag for use later, bake frozen pie at 400 degrees for 1 hour and 15 minutes
  • 4 cups fresh Starbuck’s Blueberries
  • 1 cup granulated sugar
  • 1/4 tsp. salt
  • 1/4 cup corn starch mixed with 1/4 cup cold water
  • 3/4 cup hot water
  • 1 Tbsp lemon juice
  • 1 Tbsp butter

Blueberry Pudding

Ingredients:1 pint Fresh Starbuck’s Blueberries, 1/2 cup sugar, 3 Tablespoon margarine, 1/2 cup milk, 1 tsp baking powder, 1 tsp salt, 1 cup flour. Cream margarine and sugar. Add milk and dry ingredients beating well after each addition. Place blueberries on bottom of greased 8 inch square pan. Pour batter over fruit. Mix 1/2 cup sugar and 1 tablespoon cornstarch. Sprinkle over batter. Pour 3/4 cup boiling water over all. Bake at 350 degrees for 35 minutes.

Cooked Blueberry Jam

3 Pints Fresh Starbuck’s Blueberries
Pick out stems and leaves, then crush.
Makes 4 cups of crushed blueberries.
4 Cups Sugar
1 box Sure-Jell
Follow directions found in Sure-Jell package.
Makes 6 cups of Jam
